Sheet-Pan Kielbasa & Potatoes with Dill Vinaigrette
Crispy roasted potatoes & sausage with zippy dill vinaigrette
This is a truly easy sheet-pan dinner composed of just three main ingredients: Kielbasa, roasted potatoes and a zippy dill vinaigrette.
The dill and shallot vinaigrette has a vinegary bite and spicy hint of mustard. It’s loaded with fresh dill. You can pour it over the entire sheet-pan before you bring the warm potatoes and sausage to the table OR you can serve the dressing on the side.
At our house, we serve dressing on the side. That way, my 8 year old can eat plain potatoes and kielbasa and I can drench my plate in vinaigrette. Everyone is happy.
Vinaigrettes are an easy way to let anyone at the table add more flavor, if they choose.
Kielbasa and potatoes might sound like an autumn or winter meal, but it’s actually perfect for summer too. The roasted potatoes topped with vinaigrette turn into a sort-of warm potato salad. And sausage, well, who doesn’t love sausage during the summer?
