This month’s meal plan is for meat lovers, with one fish recipe thrown in for good measure. You can follow this entire meal plan next week so you don’t even have to think about what’s for dinner OR just choose one or two recipes that sound good for your family.

Meal #1
Recipe: Crunchy panko coated fish with creme fraiche sauce
Side Dishes: Potatoes and asparagus
Use any type of thin white fish fillets for this recipe. A lemon-dill creme fraiche sauce melts into the fish as it bakes, making the fish moist and flavorful. Toasted panko breadcrumbs give the fish a crunchy topping.
After the fish is cooked, extra sauce is spooned over the top. The sauce is also really good spooned over potatoes and other veggies!
Meal #2
Recipe: Ground chicken and rice bowls
Side Dishes: Choose white or brown rice, then decide what type of vegetables to include in your bowls. The ground chicken is really versatile and can be put in a bowl with crunchy veggies like cabbage and cucumbers or roasted vegetables like sweet potatoes and zucchini.
Meal #3
Recipe: Instant Pot bolognese with pasta of your choice
Side Dishes: Garlic bread and green salad
This is a hearty pasta sauce made from ground beef and pork. You’ll need over an hour to make the bolognese from start to finish, so plan accordingly.
Meal #4
Recipe: Crock Pot shredded green chile chicken
Side Dishes: You can serve the shredded chicken in tortillas or in bowls with rice or quinoa. Then add your favorite toppings like sour cream, shredded cabbage, black beans, cilantro and grated cheese.
This recipe has only 3 ingredients that get dumped directly in the Crock Pot, so prep time is minimal. Pay attention to the cooking time (just 3 hours for chicken breasts) - this isn’t a slow cooker recipe that needs all day to cook!
Meal #5
Recipe: BLTs (bacon, lettuce and tomato sandwiches)
Side Dishes: Corn on the cob and/or potato chips
