Meal Plan #6: Four Easy Instant Pot Meals | May 2024
Rice & chicken, ramen bowls, broccoli risotto and vegetarian chili
Hello Subscribers!
This is a meal plan that will help feed your family with minimal effort. For this meal plan, you do need an Instant Pot.
After all these years I still love my Instant Pot. It’s an appliance that does all of the cooking for you. Another added bonus - when you use an Instant Pot, almost the entire meal cooks in one-pot (less dirty dishes, yay!)
Meal #1: Instant Pot Basmati Rice & Chicken
Meal #2: Instant Pot Ramen Noodle Bowls
Meal #3: Instant Pot Broccoli Risotto
Meal #4: Instant Pot Vegetarian Chili
Meal #5: Chili leftovers!
Meals #1 and #2 are listed on the Kitchen Skip recipe index page on Substack. Only paid subscribers like you have access to these recipes. There is a printable pdf at the bottom of each recipe page if you want to print out the recipe.
Meals #3 and #4 link back to my Kitchen Skip food blog where you’ll find the full recipe with cooking tips. Each recipe card on my blog has an option to print.
P.S. You can find all of the past meal plans on the meal plan page. On the same page you’ll also find a printable Instant Pot cheat sheet and a 7-day meal planning worksheet.
Meal #1
Recipe: Instant Pot Basmati Rice & Chicken
Side Dishes: Green salad, or frozen peas
Instant Pot basmati rice & chicken is an easy one-pot dinner gently seasoned with aromatic spices. The golden turmeric rice is combined with chickpeas and fresh herbs which add more flavor and texture to this simple, satisfying meal.
Meal #2
Recipe: Instant Pot Ramen Noodle Bowls
Side Dishes: Roasted frozen broccoli or steamed broccoli
To make this satisfying dish, first sauté ground meat (I like either pork or chicken). Then, add crumbled ramen noodles from packs of Top Ramen. Pour a simple sauce over the top, cook for 1 minute and you’re done!
Meal #3
Recipe: Instant Pot Broccoli Risotto
Side Dishes: Although technically a main dish, my family usually needs a protein served alongside risotto. I usually buy a rotisserie chicken to serve with the broccoli risotto, you could also warm up pre-cooked Italian sausage or chicken sausage.
Meal #4
Recipe: Instant Pot Vegetarian Chili
Side Dishes: Chili toppings, like sour cream, grated cheese and green onion, plus tortilla chips to crumble on top.
This chili delivers big, bold flavor from a simple blend of canned beans, fire roasted tomatoes, frozen corn, spices and a few flavor-boosting secret ingredients.
Meal #5
Recipe: Take the night off and serve chili leftovers!
