Meal #1
Recipe: Instant Pot Jerk Chicken
Side Dishes: Rice, roasted sweet potatoes, sautéed spinach or other greens
Instant Pot Jerk chicken is made with a super-flavorful marinade of garlic, ginger, allspice, soy sauce, brown sugar, lime juice, thyme & more. Make this with boneless, skinless chicken thighs and serve the shredded chicken and flavorful sauce over rice.

Recipe: Tofu Tacos
Side Dishes: All the regular taco toppings, plus tortillas
These flavorful tofu tacos are made with crispy, salty, perfectly seasoned tofu crumbles. The tofu has a balance of salty, sweet and smoky flavors that taste incredible with black beans, avocado and all your favorite taco fixings.

Recipe: Ground Chicken Stir-fry
Side Dishes: Rice or noodles, frozen egg rolls or potstickers
Using ground chicken is a really quick way to make a stir fry. You don't have to deal with prepping or slicing raw meat and ground meat cooks quickly. The recipe calls for bell pepper and green beans, but you can use any type of vegetable that you like.
A light but flavorful stir-fry sauce brings the whole dish together. The sauce is made from soy sauce and rice vinegar with just a teaspoon of maple syrup.

Recipe: Lentil Sloppy Joe’s
Side Dishes: French fries or potato chips, coleslaw
Lentil Sloppy Joes have the same comforting flavor as regular Sloppy Joes, but with healthy lentils instead of meat. You can use your Instant Pot or your slow cooker to make this. This recipe makes a big batch, so you’ll probably have leftovers (I like to freeze small portions for my lunch).

Side Dishes: Green salad
