Lemon-Paprika Chicken with Zucchini & Chickpeas
A sheet-pan dinner with marinated lemon-paprika chicken thighs, veggies & crispy chickpeas
As the weather turns cooler, I’m embracing sheet-pan dinners again. I love the ease of roasting meat and veggies together in the oven.
This combination of chicken thighs, zucchini, red onion and canned chickpeas has light Mediterranean flavors. My favorite way to serve this meal is garnished generously with parsley and kalamata olives. I let the pan cool slightly then set one whole sheet-pan right on the dinner table.
This dinner is also delicious for lunch the next day. Toss the cold chicken and veggies with orzo and feta to make a quick pasta salad. Or, toss with salad greens and a drizzle of olive oil and lemon.
