Leftover Watermelon? Try this recipe!
A quick hello from vacation, plus an easy + refreshing watermelon recipe
Here is a universal truth about summer: At some point, you will find yourself staring at a half-eaten watermelon in your refrigerator that you don’t want to eat.
Maybe you bought too much. Maybe the melon was a bit of a disappointment, lacking in sweetness. Maybe it was overripe and grainy.
In all of these cases, there is one easy solution.
Throw that watermelon in your blender!
In less than a minute, you’ll have watermelon juice that can be turned into:
A summer drink for all ages
An adult-only cocktail
A kid-friendly popsicle (or ice cubes)
This recipe for Frozen Watermelon and Coconut Water Ice Cubes (or popsicles) has step-by-step instructions for turning watermelon into juice. It also has a full recipe for very refreshing and hydrating watermelon and coconut water popsicles.
Here are a few more tips for turning pureed watermelon into a delicious drink:
If the watermelon is underripe and flavorless, add a little simple syrup or store-bought juice that is sweeter
If the watermelon is overripe, add a squeeze of lime or some lemonade
Add frozen raspberries or other berries to the blender for more flavor
To make the watermelon juice smooth, make sure to puree it really well in the blender. You can also pour it through a fine mesh strainer.
Any type of alcohol instantly turns watermelon juice into a summer cocktail. Try vodka, gin, rum, tequila or Prosecco. Plus a squeeze of lime!
The kids and I have escaped Southern California for our yearly return to the Pacific Northwest. This part of the world feels most like home to me. The lush green pines, layered mountain ranges and endless shades of blue are balm for my soul.
I hope each of you find a similar place this summer.
