Homemade Back-to-School Granola Bars
Chewy and not too sweet, these easy granola bars are perfect for back-to-school snacking.
I think, maybe, I have finally found my favorite homemade granola bar.
It’s soft and chewy, but not sticky. It’s not too sweet but doesn’t taste too healthy. You can add chocolate or dried fruit (or both). You can use any type of nut or seed butter that you want. It holds together well and doesn’t crumble when cut.
What more could you ask for from a granola bar?
I call these back-to-school granola bars because they are perfect for grab-and-go breakfasts, lunch boxes and after school snacks. For parents, they are delicious with an afternoon cup of coffee, which I’ve started drinking again so I can make it through our busy afternoons and evenings.
These bars are made with a combination of oats and Rice Krispies, which gives them a texture similar to Rice Krispies Treats.
This granola bar recipe takes 15 minutes or less to mix together. There’s no baking needed, just 1 hour chilling in the fridge.
