Bonus Recipe: Bean & Corn Salad with Lime Dressing
An easy bean salad for summer potlucks

You might not think you need a good bean salad in your life, but I’m here to tell you that you do. Especially during the summer!
This simple and delicious bean salad is:
An easy make-ahead salad that gets more flavorful each day.
A high-protein salad that you can leave in the fridge for lunches or simple summer dinners.
A filling side dish for BBQs and potlucks.
Very versatile! Eat it alone or serve the salad next to grilled burgers, steak, chicken or pork.
This bean & corn salad has the creamy texture of beans, crunchy bell pepper and celery, sweet corn and a zesty lime dressing spiked with garlic and chili powder. You can use any combination of canned beans that you like and either fresh or frozen corn.
Bean & Corn Salad with Lime Dressing
Servings: 4 (it’s easy to double for larger groups)
Cooking Method: No cooking, just mixing and chopping

Ingredients
2 (15.5 oz) cans of beans, drained and rinsed (pinto, garbanzo and/or black beans)
1 cup corn (frozen and defrosted or fresh off a cob)
1 bell pepper, finely chopped (any color)
¼ cup finely chopped red onion
¼ cup finely chopped celery
¼ cup olive oil
3 tablespoons fresh lime juice
½ teaspoon stone ground or Dijon mustard
1 clove garlic, finely chopped
½ teaspoon chili powder
½ teaspoon salt
Optional : ¼ cup chopped cilantro or parsley
Optional: 1 jalapeño pepper, seeded and finely chopped
Instructions
In a large bowl, combine the beans, corn, bell pepper, red onion and celery. If adding jalapeño and/or herbs, add now.
In a small bowl, whisk together the olive oil, lime juice, mustard, garlic, chili powder and salt.
Pour the dressing over the beans. Mix well.
The salad will keep well for several days in the refrigerator.
Notes
I like to use a combination of two different beans for this salad. Choose from pinto, garbanzo and/or black beans.
